Recipe - Shrimp Ceviche

Assalam - U – Alaikum & Hey my Beauties... Hope you are in the best of health and peace.

Today I’m pretty excited because I am about to share my first recipe on the blog along talking in depth about a dish I love & can devour everyday *-*

That’s none other than "Shrimp Ceviche" with a side of Mashed Potatoes…Yeaahhh ^._.^

Being an ultimate sea foodie since my childhood I’ve always tried to learn and cook with different seafood options and cuisines from around the world. And I’m sure you don’t know this about me that I’m cooking since the age of 12 – a severe childhood passion I must say – And now you know lol – However, lotsa credit goes to my Dad and Mom for being so supportive and teaching me how to cook. My Dad (Late) was an excellent cook. Shrimps were his favourite too. So had too mention Him for sure ^_^

By any chance if you are not aware what Ceviche is; it's a really popular seafood dish in the coastal regions of Central America, Perú, Mexico, Colombia, Ecuador, Chile and other parts of Latin America. The dish is typically made from fresh raw fish/shrimp that is cured in lemon/lime juice and some times in Vinegar. Different spices/seasonings and additional condiments are added such as chopped onions, spring onions, corn, avocado, cucumbers, tomatoes, olives and even lettuce. But trust me you would never know the seafood was not cooked prior to serving. And it does not stink at all. Since the dish is not cooked with heat, it is highly recommended to use fresh fish/shrimp to avoid any chances of food poisoning.

The preparation time of the ingredients is really quick maybe 20-30 mins but to cure the shrimp you may need to refrigerate it for few hours or overnight. An additional TIP in my case for today is regarding using frozen shrimp as that was the only one availability to kill my craving for this awesome dish. So I had to pan seer them slightly and I only cured it for 2 hours and I must say it turned out to be perfect ...!!

Yes…If you would be wondering whats up with the mashed potatoes? So I’ll be honest I have read different recipes from the Lima- Peru region for Ceviche where this combination is soo popular in 5 star restaurant menus and really loved by renowned chefs. But I made my own version.

Specific Ingredients For My Recipe:

Ceviche:

  • Shrimps

  • Fresh Lemon juice (depends on your mixing bowl – the shrimp should be soaked in it nicely)

  • 1 medium sized red onion

  • Sprinkle of chopped green onion

  • 1 cucumber

  • 1 big sized tomato

  • Chopped green chili

  • Handful of cilantro/coriander and a little bit of mint

  • 2 Tbsp Extra Virgin olive oil

  • Salt (to taste)

  • Black Pepper (to taste)

  • Chili Flakes (as I love it SPICY *-*)

  • 2 pinches of Sugar

Mashed Potatoes:

  • 4 Medium sized potatoes

  • Oregano

  • Salt

  • Mint

  • Coriander

  • Milk (can be added to soften the texture and make it buttery but I DID NOT)

Method:

Ceviche:

  • The method I used is extremely simple. I layered the shrimp first in the bowl making sure making sure that the lemon juice is completely covering it. Added the seasonings and topped with all my chopped veggies. After that I covered the bowl with cling film and refrigerated for 2 hours.

  • Once it was nicely cured I just mixed all the ingredients together in the same bowl thoroughly and Viola you amazing Ceviche is ready.

For the mashed potatoes:

  • I did not peel the skin prior. I poked in a few holes with the help of a fork and added them to boiling water. I also added 1 Tbsp of table salt.

  • Once the potatoes were cooked to extreme tenderness. I drained the water and peeled the skin.

  • I mashed them with a help of a fork and added the seasonings – but – I reshaped it to my liking as you can see. You may add milk to make it more buttery like a whipped texture and spread it on your platter rather than shaping it but i like it spicy than creamier =D

I just dished it out and added extra chilies and lemon on the side – Just in case if you’re sharing your meal with someone like me haha.
